All Deeds Collected By Me are Unlocked the way I did, please note that there maybe other ways to unlock these Deeds and in different locations.
Please feel free to add to the list and add any different methods of unlocking.

Only 2kg+ fish can unlock the worm deed. Anything smaller won't count.

Yep , I was catching loads of fish and it didn't want to unlock and I couldn't understand why. Until I accidentally caught a 2kg+ one.

More info for the worm deed.
Not sure about unlocking, but after the deed is unlocked, it doesn't have to be on a stick rod, I finished it out with a feeder. And larger fish may count for multiple categories. I think my 10kg catch counted as my last 5kg+ fish as well.
