Why are water ripples and physics so over-exaggerated now?
It looks so fake and unnatural. It looks more gelatinous or like oil than it does water. It looks terrible. Surely others have noticed this too?

Yeah seen it too, but to me there are other issues that needs to be adressed first.

Well yeah, the whole game is kind of a dumpster fire right now and off its tracks. But still..

Game got an updated game engine recently, so alot of things need adjustments atm encluding physics.

Remember its still a game under development and it properly always will be.

I like the intention behind it, always felt the water was a bit too still especially after fish jumps, fighting a fish on the surface or when dragging a tired fish or the wake of the boats. Hope this gets fine tuned/reduced in the future, it's a good start.
It's also still new enough I'm more entertained by it, when a 2kg crucian can make waves so big that I see the shallows because it parts the water like Moses lol

In the beta sometimes the water goes wild too, a bunch of ripples popping off like several boulders hitting the water in quick succession. Waves hitting each other causing new ones to form, or increased surface fish splash/aesthetics?
Probably the wave physics, but hoping for the latter since I would like some more sight-fishing type cues when looking over the water.
You are wrong! A lot of players have notice that 3 or 4 months ago! But developer do nothing. He thinks this water is really good. And water is buggy as hell.
If you look closely, the rendering of the water at 15 meters and more is very good, the moment when the fish arrives at the surface is perfect, on the other hand the same movement of the fish at 10 or 12 meters the movement of the water is too strong, I do not know if it is possible to reduce the close effect, because the far effect is perfect, but that is only my opinion ;) and it is the same except that our perspective is very different
