Basically the Hypersports cars will fetch the most, the 4 that came with Drag DLC, Pagani DLC or the Morena Bizzerani, all will fetch 300-400k fully tricked.
If you want to make Mad Money, then you will need to grab Workshop Mods.
Ferrari 250 GTO will fetch 38-40 mil but a 1% frame from the Junkyard* will cost around 4-5 mil, buying all parts new will cost ~300k for the build, so you can get 30-35 mil net.
Next is the McLaren F1, 12-18 mil depending model and you can get lucky at the junkyard for under 1 mil and about the same build cost as Ferrari.
Batmobile around 7 mil
Aston Martin DB1 goes for 5 mil
Mclaren M8 3 mil-ish (I think)
911 "Yellowbird" about a mil
65 Mustang 350 GT-R about 700k
to name a few.
The Mad Money ones do "break" the game a bit but once you've made the first million it's not a problem anyway, even just using vanilla cars you are pretty well set once you have 100-200k in the bank.
Edit M8 is ~1.2 not 3 mil.
