One question - does this game let you save your game mid-battles
Does this game have mid-mission/battle saves, please? Can we save whenever we want, in case real life gets in the way during a long battle?

Yes! The game offers two modes, manual saving and roguelike mode. Manual saving lets you save the game at the start of every turn in battle in a slot of your choice, whereas roguelike mode auto-saves over your save slot at the start of every turn in battle. Either way, though, you will have access to mid-battle saves.

This is a dumb question but how do you save outside of battle when on Manual? Never noticed when trying the demo.

That's not dumb at all! The game auto-saves when you switch scenes even if you're playing with manual saves, so you don't need to worry about saving outside of battle.
