Selecting between characters is currently not yet possible, there has been to the EA a male person, but due to various requests for a female person it was changed at the request of the community. Switching between characters will be introduced in upcoming updates.

If your squat does not work, try a reset in your control in the game. If it does not work go to:

C:\Users\MYUSERNAME\AppData\Local\KeepUpSurvival\Saved\

There are 2 folders Log and Config, delete these two (Only if you know how to do this). After that go into your game and try to squat.

In any case, you need to move briefly when you are in the game so that your character is fully loaded.
