Hello fellow Steam user. I have figured out how to win 1st place in this comp.
Open recipie for Belgian Golden Ale small batch
- 8kg of Belgian pilsner grain into mash tun
-mash out as normal and transfer to pot
- boil wort to 100°C and add 100g of Pacific Emerald hops.
-Use X-ray to check flavours do not go below 18.3 (they will go to about 18.4 before they will start to drop. You don't want this)
- remove hops and cool wort as normal
- add 150g of Sixtus 2 yeast. No corn sugar
- Ferment for 15 days and use x-ray to check ABV is over 10% (I got mine to around 10.4)
Transfer to conditioning keg and condition for 21 days
- use force carb on keg to put carbon up to 3.91
- serve
There is always the mark missing at "max 5 flavor notes with at least strength 5"..
EDIT: I did it without the 5 flavors and just tried to brew a belgian quadrupel and got it done with 85% and all the other liked tastes for the competition.
