New Difficulty Options will be added soon
The dev teased some new difficulty options on twitter. Options will include being able to increase item durability so things don't break as often, and decrease enemy health and base statistics. Also to start with an item that gives you more than one life. The screenshot doesn't show all of the options but I think you will also be able to make things more difficult as well if the game isn't hard enough for you.

I look forward to being able to customize these options once this update hits. Having more options is a good thing.

Interesting. I'm happy that people who are not very good at the game will have an easier time with it. Not super interesting to me personally.

Yep, the dev isn't taking anything away, just adding options so no one will have to pick a different difficulty unless they want to. On discord he said there also will be options to make things more difficult/interesting with an option to "spawn extra enemies and give everyone random abilities, better quality gear for that extra challenge".
