Just play the "legendary" difficulty, aka the actual difficulty from release.

I have waste time on it before beat it difficult.... today I should never buy it if it was for easy...
greedy dev sell high price dlc....

The problem is now, I have no idea if the "legendary stalker" is the actual indendet difficulty, because the balance feels all over the place, at least in the dlc. You fight one of the most difficult bosses in the game, that requires several hits to kill you, and then you enter an area where robot maids can kill you with 2 hits with a freaking mob. It feels really weird.
They should have given an npc to summon for the entire areas for people who struggle too much, that would have made it way more immersive. I mean, you can summon for bosses already which I thought was easy mode enough, and you can buff your summon, too!
Anyway, but nothing raises the difficulty as much as the camera in the new dlc bosses arenas! First boss pushes you all the time till you're at a wall, making you see almost nothing, second boss flies around all the time... and there's 2 bosses, so good luck relying on sight!
Game is so amazing, I have no idea why they would add two easy modes but didn't bother with improving the camera (just zoom out wtf is wrong with you, Bloodborne did it with Laurence, why can't you a decade later?)
