you'll be happy to know it's a lot easier now, They've added lower difficulty settings, and even nerfed some boss attack patterns. You'll take significantly less damage on these easier modes, making for a much better experience as you are new to souls games.
This might help you in the end, since you're not used to Soulsborne mechanics.
I found the game to be weirdly fast and slow paced at the same time, maybe I focused on parrying too much and didn't use the regular dodge enough, but in the end it was managable even on the default difficulty, and if it's still too hard for you, there are so called "spectres" that can assist you during a big boss fight.
I can't really say since I haven't played on the lower difficulties past the first few minutes of the game. I would also be extremely biased since I no longer remember how difficult the game was when I first played it.
That said, most of the comments I've read about it said the game felt better on them. Enemy patterns don't change, so you could still be getting hit a lot, but you have way more chances to recover.
some bosses and field monsters have had their attack pattern animations slowed down since the demo (which was the last time OP played the game) it was updated on patch 1.3........
