Without spoiling too much, the game strongly encourages you to treat its hardest fight like a story setpiece the first time through regardless of difficulty, and you can refight most non-Stalker bosses through Battle Memories if you want to run them back afterwards in which they're locked to Legendary Stalker difficulty. Lv1 isn't quite identical to NG scaling but it's close enough.
Looks like I’ll be playin’ it on Normal, just to keep the stream flowin’ smooth and avoid gettin’ stuck too long on those nasty bosses.

You're just looking for excuses to play on normal. Man up
From the in-game description for Legendary Stalker: "The standard difficulty for players who enjoy tense action games. You can experience the story while enjoying challenging combat."
With the DLC, they added two easier difficulties below the "standard".
I'd just keep it on Legendary Stalker. The levels are structured so you're never too far away from wherever you died, and none of the bosses are damage sponges.
