can the overture dlc be remade ?
If I start the story from the beginning, can I also redo the DLC or once I complete the DLC, I can't redo it anymore

No the DLC can't be remade a lot of money and effort went into making it the first time, but you can replay it with every new play-though.

available from NG after reaching ch10, available from NG+ (starting the story from the beginning) after reaching ch5
