The issue is an incompatibility between a Pet mod and a Vendor mod.
Without a mod load order listed here it's difficult to know for sure.
This particular Pet Transform became bound to the Pet. At this point the solution would involve losing the character. I'm not sure if that's desirable at this point. Unfortunately some Pet mods contain bugs like this.
The only fix is to feed him a fish, and then he'll show up for a while. Thanks to one of the mods I can also give him a permanent look (it's called an aspect), but if I ever feed him a fish again, he'll disappear when the time is up again.
I'm researching older threads, but it seems, as you say, that it's a bug from a mod, and since Bob's Mod was installed just today, and I've been playing my mod order with no issues until today, it's probably Bob's Mod. I've removed Bob's Mod, but I guess my pet is permanently messed up now because the problem persists.
