How do I restart the game?
I would like to play the game ALL the way from the beginning. Although I uninstalled it and reinstalled it again showed my old memory. Where are my savegames to delete them in order to start over? I tried everything and am at a loss ... Could I imagine that this is due to the steam cloud? If so, how do I get to the memory levels? A "new game" button in the game would have been easier and more helpful as with other games too ... -.-

I am grateful for any help could not find anything about google ...

and are also copied to the Steam Cloud.
(Mac or Linux locations will be different.)

To reset the game...
1. Disable Steam Cloud for the game
(In your Steam Library right-click on the game, select Properties, click the Updates tab, then un-check the box for "Enable Steam Cloud synchronization...")
2. Exit Steam
3. Delete the local save files (keep a backup if you want)
4. Start Steam, play the game, then quit playing
5. Enable Steam Cloud for the game

That's what I call a wonderful explanation ^ ^ have many thanks!

But hmm I did everything exactly that way, but I do not think there are any more storage files left, and still I always start where I stopped last, instead of from the beginning. Although I have already uninstalled the game several times ... can it be something else?

Oops. My mistake. I should have re-installed the game before replying. :steamfacepalm:
The location I suggested was just my personal backup, lol. The game actually stores the save files directly in the folder used for Steam Cloud.

BUT, you can reset the game while playing!
From the pause screen, go to Settings (the "spanner" icon), then select/hold the "Delete Saved Data" button at the bottom left.
