I have had this before. I know one issue that caused it was that Kotor 1 was using more than 1 core to run. However I am pretty sure that the Steam version forces it to 1 core to avoid this problem.
You can check to see how many cores the game is running and if it is more than 1 that may be the issue.

* When I first went outside the ship in the prologue the ship wasn't being rendered and I had to quit and reload to fix it.
* Then when I docked with Peragus during the cutscene my screen went black after seeing HK and after a moment continued rendering with all the walls and floors missing. Only after quitting and reloading could I see the walls properly.
Intel 4600 iGPU under Gnome 3.
I'm having the exact same problem with the same GPU. I can fix it when it happens by going into the advanced graphics option and changing the quality options from High to Medium then back to High again. This needs to be done for each area though...
... and you can only use this fix if you can access the options screen, which means swoop racing is off limits to me as I can't see where the obstacles are. the Esc key only pauses during a race, not bring up options.
