This is a list of the enchantments available in the game.

Armour

Dexterity Increase speed of swings and bow draw etc.etc.
Health Make the armour indestructible.
Constitution You have a slower burn through your food, Eat and drink allot less.

Weapons

Sharpness Sharpness and hard hitting technically do the same thing but can stack, if available, Increase the damage done by a weapon.
hard Hitting
Toughness Reduce the loss in quality of the item, maxing this out makes the item indestructible.
Radiance item will produce light when held.
Pillaging Increase the quantity of items that you mine or farm when you hit with the weapon.
Fortune Increase the level of items you can find in loot containers.
Prosperity Increase the enchantment chance for items you find in loot containers.
