For your sound, I'm able to reproduce it, seems it only ignores your setting if you change it in-game. If you disable it through the main menu settings page, it does work. You can expect a fix for this music not being able to change in-game to get published in 24 hours.
You're not the only one who has informed us that it's not clear you can drag in the architect atelier window. As for showing all icons, you can actually scroll to zoom in and out so you can see more of the icons. We are looking into how we can make that more clear.
As for the UI, we've already sent it on a diet after Next Fest, but it seems that for some it's still too big. We will resolve both of these issues, but these require a bit more time so it will either come through a balancing/QoL update at a later date.

EDIT: The music volume bug has been fixed, you can edit it in-game without issue now.
