You'd have to list every part that you wanted for the AI cars. I don't know of any way to copy your owned cars directly to an AI profile.
The file that defines each part that an AI car uses is a .cavs file. There are a few other AI files that are also needed for doing things like letting the game know which cars you want in your custom AI set, or telling the game that one of the AI cars should use that custom parts list that you made or a specific skin.
The .cavs files are sort of zipped up in the Wreckfest game files now. You will probably have to go to the Wreckfest Discord and get the unzipped version of the game files so that you can get copies of those .cavs files so that you can make some custom ones for your mod.
The files got sort of zipped up to make the game load faster.
