I clicked on a clan member in the settlement screen to change profession and they had all the available trades in full colour (i'd completed the tech tree) and the four listed in my original post were listed in crafting, blacksmithing and discovery but 'greyed' out - hence my thinking they were 'missing'. It would seem then that they are somehow ghostly available in one particular view.
Nice work though Jon - really cute game. It fleshes out my favourite phase of any Civ game and turns that era into a whole experience.

Ok - so to reproduce: Play as the Goths. Complete the tech tree. Click on a clan in the settle. Click change profession. See these 'deleted' technologies
