Your plan to build a network of brain coral will definitely work. And you surprisingly don't need nearly as many as you might think if you use the Seaglide and Ultra High-Capacity Tank, as that's enough air to get you 2000 meters. Definitely fun to create an O2 network that lets you stay underwater without a vehicle indefinitely.
There is still some fun post-game exploration to do if you didn't find all of the alien archives (there are 3 of them), or collect all 5 Cuddlefish.
I felt 90% of the exosuit fun came from using those, so this is certainly something to try.
You could if you wanted to. Actually, you can get pretty far with just an extra tank or two. Things are a little different when you explore harder challanges with new game mechanics, using mods like Deathrun Remade.
