You can't add a "new skin" this way, you'll replace the old headphones01 textures. Adding a prop is a completely different process and you can do it by following the community avatar/prop/background documentation.
I have do it like you can see but the doesn't change the headphone.
It's maybe cause because I try to put the headphone on "Apex" from starbound DLC no ?
And if it's that can I change the texture of the Headphone for all Avatar ?

The headphones01 re-texture process requires a bit of hacky stuff. The idea is that, the global headphones take the textures from Fluffo's specific headphones, but to activate it, you need to do the following: create a folder in <steamInstallDir>\steamapps\common\FaceRig\Mod\VP\PC_CustomData\Objects\accesories\headphones01 and add a distinctive .png file named ico_headphones01.png (256x256 resolution). This will trigger the global prop to refresh its texture from the customized avatar01_accesories\headphones01\ folder.
