Report a translation problem
Change the names of the companies you wish to change.
Save the file.
Create a mod file.
Select the mod with the video settings editor.

XML files for Base City Map is located in Game Folder/media/Maps/Base City Map/scripts/
MeshMagick folder is in Game Folder/Modtools.
So you need to go up a folder, and then navigate the tree to Base City Map folder.
In the AI editor, you can use any city.xml file. As it is just used to fill out the city names and ID's for ease of use.
If you're talking about the mod editor, you do not need to do anything with cities unless you modified the cities.xml files. You only need to override the AI for the selected map.
As I said before, the video is showing how to make a mod for overriding cities, turnevents, and AI files. If you're not modding cities or turn events, you don't need to do that part of the video.

If you changed any AI logos, you will need make sure those new logos are in .dds format. Zip them up, then do:
2:40 (2 Minutes 40 seconds) to 3:00 (3 Minutes) in the linked video.
Finally, to export the mod, you do:
3:00 (3 Minutes) until the end of the video.
Is that intentional ?
Yes, at one point I was going to have different skill ratings for different brand vehicles. However, I ditched that idea early on. I will probably go through and even it out next time I look through the AI files.
For example, if you selected "Ultra Rich High Performance" the AI company will probably try to design supercars and racing cars first. They'll then try to make sports cars. They will avoid making economy cars. Although, they may eventually make an economy car after making several other models. If they were to make one, it would be a high performance economy car.
Luxury Companies on the other hand will try to make luxury cars first. After they have several, they'll do normal people cars, but they'll be more luxurious than not.
