The setting you're looking for is called "Customer Fluctuation" and is a slider in "Options 2". You'll want to crank it more toward "less".
Auto production is located in the Mega Menu (Office Computer), Auto Commands. Just check the "Auto Produce" check box.
Alternatively, you can do what companies do in real life, and that's carry an inventory. You over produce for several months until you have 3-4 month inventory supply, then you simply cut production and sell through the inventory for 3 months, then repeat the process. (The length of time could be extended if the model sells well or you want to be lazy.) When your model is ready to be phased out, you simply sell through the remaining models after you end production before you stop selling the vehicles.
