Although the game's original target audience was kids back in the day, this certainly doesn't mean it behaves like any other game. It rewards you for learning every car's quirk, although some are very difficult to use and are borderline useless, just not in the generic way a lot people believe.
As for the ending, although that possibly may be tied to an FPS issue with the original version of the game, if you look closely you do steer very slightly just before the car lands. This is what caused you to spin out. Never steer until the car is back on the ground.
TL;DR: Skill issue.

If you know that and you are still bad at the game, then it’s a skill issue, I'd recommend you to practice then.
Still, if I have to be honest, racing is actually quite easy in this game, even more when you use a rookie car, not even a pro or semi-pro one. Keep practicing men, I’m sure you will eventually fully understand and get the hang of the controls in the game. Good luck in your journey.

What did you expect to happen after landing when you hit the floor steering all the way to the right?
There's no one normal game mode, you got your cup racing, your single races and time trial along with neat bonus modes like stunt arena.
Here are some actual pieces of advice by a former player:
To get better you just need to find a car which suits your playstyle and avoid hardsteering in favor of tapsteering (tapping the steering input rather than holding it). Once you understand this basic mechanic try using wallbangs/wallgrinds to help you get around sharp corners more easily and efficiently. Rather play it safe than risky - if you're in a comfortable lead, don't mindlessly reroll your pickups. Instead, only try to go for new pickups if your lead is being threatened.
