I suggest not using mods. Enjoy the game as intended by developers.
Game is great without any.
1) Component Quantity Gain on Dismantle Screen - before you dismantle an item you see how many parts you'll get
2) Eating Can Wait - you simple can't abuse eating during a fight but can drink witcher potions, so bigger focus on alchemy
3) Blood Trails - purely cosmetic
4) Glowing Witcher Eyes - purely cosmetic
5) Larger White Orchard - cosmetic. It makes an illusion of the location being part of a larger land mass
They are steam workshop mods so all you need to do is subscribe

Cloaks for geralt
Full quest exp so lower quest dont give 1 exp
Realistic weather
better hairstyles and beards
Gwent overhauls though id recommend this if you want more challenge
better trophies
better minimap
brother in arms which fix over 5000 bugs
fast travel from anywhere
no fall damage
improved saddlebags to hold more loot
and theres many more thats just to name a few and yes you can have an amazing experience without mods but theres some that make it alot more enjoyable and theres nothing wrong with it
That way, you wouldn’t trigger scripts that the game expects you to trigger and quest progress can stall.
And beyond that, if you FT everywhere, you will(!) miss a ton of random events and encounters that are never marked on the map until you trigger them by drawing close.
