I'd recommend updating your graphics drivers. Or possibly rolling back to a previous version.
I haven't tested the game personally on Linux Mint, but some beta testers were playing on different Linux builds (not sure which.) I tested on Ubuntu 12.04 and SteamOS.
The game was built with Unity 4.6.5 and isn't really doing anything funky.
Definitely get a refund if we can't fix the problem, though.
Is there an option to force windowed mode?
EDIT: you can edit the resolution and fullscreen mode in: ~/.config/unity3d/Casual Labs/Paint it Back/prefs. Now it works :)
What graphics card / drivers are you using? If you don't have it, get "inxi" (sudo apt-get install inxi) and then type "inxi -G" to get info...
I experienced NO issues running Paint it Back - and I have been addicted to it for a few hours or so... ;-)
EDIT: sorry, didn't realize this was a week old. I suppose the OP either bailed or figured it out.
