Gothic II: Gold Classic

Learning lock-picking
So I have been playing Gothic II for a couple of days. I like it. Except for the fact that I have quite frequently initiated dialogue with both Matteo and Thorben from pretty much the moment I entered the city until being approved for apprenticeship. Matteo was not one of the four masters that approved me. In fact, the others claimed that he had never even heard of me or something to that effect. He has never offered me the Gritta quest. Thorben gave me his approval, but he has never offered me the Lehmar quest, so in other words, I am still not "trustworthy". Do I need to do anything else for either one of these quests to appear? Or has the game decided that I will never learn lock-picking?

Lock-picking can be learned from several NPCs. Not just Thorben.

Rameriz from the theives guild will teach you it for 150 gold.

Also, IIRC in order for Thorbens questline to pop up, you need to steal Lehmars book.

IMO that no-one asked for is that lock-picking in Gothic 1 and Gothic 2 are kinda a waste of LP. Pick-pocketing on the other hand.....so much EXP from pick-pocketing.

I'm not sure what's happening there. I've never had that issue. Usually I get the quest from Matteo and then go talk to Gritta. The other way to get lock picking is to join the Thieves guild. The price to train there is cheaper. Lock picking isn't useless. You can get a +3 dex potion from the hardest locked chest in the Thieves Guild. It's also a lot of extra cash and items. I usually get it from the thieves guild as quickly as possible to get the dexterity potion.
In NOTR (may be similar in Classic - not sure), it's possible to overlook the dialogue that triggers the Matteo and Gritta quest if you mistake a subsequent question for a repeat when it's not. The original question is "Can you help me get into the upper quarter?". After Matteo answers, the list expands to include "So can you help me get into the upper quarter?". This isn't a repeat; it opens up the path to the Matteo and Gritta quest.
