You only need one coop for how ever many chickens you want. To be able to buy chickens (roosters are only cosmetic and don't drop anything) you have to have a completed chicken coop sign. I like having a feeding tray for every 2 or 3 chickens so I don't have to feed them as often

i was reading there last ever update when they added ducks, they added hatching eggs, i remember only ever once i had a item to hatch baby chicks, now im slowly getting back into it, for the life of me i cant find the item to hatch them, i don't know if it unlocks when you do the pet shop quest who knows, but said that should be easy for players so i though near the start.

There is no ability to hatch eggs into chicks in vanilla Staxel. I've been playing the game since it came out in early access early 2018 and there were no chicks in the game at that time either. I was also a beta tester for every update and there were no chicks during any of those updates either. Check this post for what was added in the last update.
