You have control over each slot individually, and every slot can be the same or different items so this is already possible by using multiple slots for the same products.
Each slot of the warehouse is set individually to either be currently intake for storage or output to either the docks or factory and can be changed any time you want.
You also don't really need the warehouse at all unless you are storing more than your docks can hold (10,000 of each product)
Individual products can be shut off from auto-export on the trade screen, so all extra product will automatically stay in storage (or get used by the factory) and only your chosen export contracts will be filled while auto-export is shut off.
