Can I beat the game without using the main character?
Is there in any battle that requires one of the main characters to participate?
Am I able to finish the game with only player-created characters?

You can do this, yes. You're never reuqired to level up anyone you don't want.
Do note that capturing monsters is limited to those at or below Adell's level, but that's not hugely important.
