How to play an older version of the game?

How am I able to play the game that dosen`t have the newsest update?
It`s becasue all servers are "down"

Hi, I'm currently in the middle of releasing an update, apologies for the delay! I tried to do it as late as possible to minimise disruption, sorry it affected you :(

Oh, alright. It's fine.
So should the servers be available to the people that have updated their game relatively soon?
