When you beat a map, it uncovers new maps on the adjacent fields of the map grid, but there are maps that have not directly adjacent maps. You need to activate an etheral map item from the items menu to create new randomized maps off the 'beaten path'. Once you beat an etheral map, it will also uncover adjacent fields, which can contain a regular map once again.
However, make sure to beat that uncovered regular map before you quit the game session, as otherwise it will have no adjacent map anymore, as the etheral map has vanished once you beat it.
That makes sense. I hadn't played in like a year and so now I'm trying to remember everything I was doing.
