To enable underground farming. The space on the overworld is not enough. There are already existing indoor farms where the plants getting light from LED lamps in our world and they are built because of decreasing space.

Try building hydroponics - they are exactly what you are thinking. They can be built underground and are really compact, the only downside is they require power.
