From that position, I was trying to chop the tree with my attack, but the "Open Minecart" was in the way and I clicked on that instead. Next, I hit ESC to exit the minecart inventory and clicked elsewhere on the screen to attack/chop the tree. My character kept attacking with the axe until I clicked again.

The weapon doesn't seem to matter, and it will trigger on other things that open another window, such as cooking at the kitchen or entering the storehouse. As long as that's done with a click and then after exiting the first thing you do is another click, it will get stuck attacking until you click again.
