Is there any IMDb equivalent for video games?
Is there one such website / forum that dominates market for gaming news, discussions as IMDb for movies/TV?

Gaming news sites? Gematsu is the best, if you looking for something more known with worse quality then IGN, Polygon, Gamespot, you can find more if you type gaming news sites in google.

about as seriously as you would take any service where anyone can submit their own reviews of a product without proving they own it or watched it in the case of movies

Moby Games for who worked on a game.
OpenCritic/Metacritic for reviews.
ResetEra for the most important news. :steammocking:

No there is not. There are a bunch that focus on different things, but there is not one "go to" sight for the complete list of games.

MobyGames if you want a user-edited database. Gematsu if you want press releases. IGN if you want gaming news and reviews. Archive.org if you want to relive the past.

Only as seriously as I take IMDB...

It's just whatever people submit and info about the game/film in one spot. It's useful when you know nothing about it. It's like a starting point to research.
