Just bought Dune Awakening BUT...
I have had to put in an immediate refund because it took it all from my credit card.
I put in my details for steam wallet, it then said there are not enough funds to cover, please select a payment method to cover the remaining cost, i did (had to fill in payment details) it then took all of it from my Credit Card.

This change they have done is rediculous, it should have taken 1/3rd of the money i have in my steam wallet. I am now waiting for a refund to be done.

Almost sounds like you accidentally clicked the back button to change the payment method.

no i did not. I did exactly as i said - chose steam wallet - filled in info = not enough funds please choose another payment method to cover the remaining cost - chose card filled in info and it took all of it from card, it should have taken just the remaining amount.

P.S am still awaiting the refund which i put in for immediately

Yeah you made a mistake, I have done this numerous times where my wallet did not have enough funds and I paid the remaining amount with my card. It shows you exactly what is going to go from the wallet and what part is paid by the card.
