Unlink services from the Steam account
Is there a control panel where I can see which services are connected to my Steam account and unlink them from there?

all linking is done on the other side, not on steams side. if you have an EA, Rockstar, etc account linked to your steam account, you have to contact EA, rockstar, etc to unlink it
Yep. You would have to go to each site and unlink it from their side. Steam has nothing to do with linking accounts, it is all done on the developers of each game.

Well, that's a load of rubbish. How am I supposed to remember now what things are linked to my Steam account?

By going through your game list on Steam. For example you have Star Wars Battlefront II which would be linked to an EA account.
