It used to be a feature. Valve took the Download/Update All button away when covid happened to save bandwidth and I don't think it is ever returning.

If you don't want updates to be scheduled, change the game's update settings to High Priority. They will update immediately upon seeing an update.

Learn to use schedule and off peak hours then it suits you,

Example i use 01:00 to 05:00, fo all games, you cant avoid update them game you play and click on anyway rest is see as steam update my crap then you feel like it.

ps.
And yes it require you let go of i need to have to do it, and controll issue many people have so had to do that. i could also say if you don't play them atm. and will not uninstall them then that a great way to deal with it.

ps.
There is steam user with 1000 to 5000 games, they get flooded down with updates, so as i said you need to let it go, best advice i can give you and overtime you will adapt to it.

Do not think we are better then you we others went through this just like you.
it help with the more games you have, you will accpet not playing games, will be seen as i dont care anymore untill you do play them.
