Steam was established as a platform that promised developers automatic and easy updating. Only option is run Steam in Offline Mode to stop an update, or if the developer offers a beta branch of older versions as the install option.

And this is a moral situation since the customer paid for a specific product as it stands at the time of purchase. If the devs want to alter the game , then or they have to refund back the money or give the choice to the customer to update or not .
