never use windows update for drivers, it grabs generic that cover a wide variety of hardware, never specific to the hardware you have
Go to Advanced Audio settings in Windows after all drivers are install and disable the NVIDIA or AMD GPU related HDMI/DP Audio in the Playback Devices list; this will put a stop to it changing without asking.
If you connect a USB headset, then double check this setting to ensure it's the default or active device so it is used in all apps and games while that device is plugged in.
DO NOT hotplug audio devices during gameplay; this often will not work as intended.
dualsense/ds4 and xbox controllers have a sound card in them, and windows will often set them as default when they are plugged in
windows will try to switch between the last 2 used, but always gets confused when there are more than 2 enabled
