Producer is great if you're tight on money and have your own plugins. It has all the features you need, including audio recording (great for guitars by the way) and audio clips (useful for electronic music).
Signature is basically the same as Producer, it just comes with more plugins. It includes a few of Image-Line's synths like Sytrus, which while hard to use, is awesome. I personally bought the Signature bundle because I wanted the extra plugins.
I personally recommend the Signature Bundle, but the Producer Edition should give you all you need. Image-Line does sales and coupon hand outs occasionally, so you can always buy any synths you want later at a reduced price.
