Does Ahsoka Tano count? I'm not sure if you're counting the Clone Wars movie, and I liked her attitude problem in the beginning of the series.

Then that's my choice. And she became even cooler in Rebels.

Mandalore.

Like mandalore as the legendary figure of mandalore or mandalore we meet in kotor 1 and 2 (canderous ordo)? I actually do think he's a really cool character and is even cooler in number 2 when he's taken the mantle of mandalore.

Ki-Adi-Mundi. Even though he was tired and injured he still held off General Grievous. This isn't a movie so I guess it counts.
