As someone who works in fine dining, I kinda gotta say gimmicky. But the whole culinary industry in general is gimmicky hipster nonsense.

Probably not. There are high end steakhouses in New York and elsewhere with far better reviews and reputations that also cost less. The gimmick doesn't add anything for me and if I wanted a combo of dinner and entertainment then I'd do something like dinner theatre.

His restaurants are probably geared toward the social media crowd (and his 15 minutes have long past)

Like music, you need more than a gimmick to stand the test of time.
