Definitely Skyrim! Even vanilla version if a giant swings their club on an NPC (or the player), they can go flying

There are even quality animations if your character goes ragdoll in the game from a fall or something. It will go cinematic mode for that, too.

Yesterday I was playing and I fell off a cliff, landed on the rocky edge of a waterfall and it just poured me downstream my whole characters body completely limp

Cyberpunk 2077 has good ragdolls. Same with GTA5. Can really launch the NPCs with the right gear
