It’s kinda hard to change someone’s mind. Who unironically says “Wow, you made some good points. I’m switching sides.”

That's too difficult to answer without any context. It's gonna vary by what is it about, as it might not be possible or I won't feel like it.
Yes I do this occasionally. In a casual conversation, either IRL or online, someone makes a statement that is factually incorrect, and I will let it go rather than correct it. Usually when it is about something that is not really that important, and the cost/benefit analysis of correcting them tilts to the negative side.
