I don't see the issue.
Unless it's the REALLY sweet Cherries then I can understand why.
2 I LOVE pineapple... and the pizza hawai is a decendant of the tosti haiwai from 1800s back when pinaple was the most luxery thing in the world even the queen of england had at best 3 a year basicly it is like eating a whiterhinesteak, or a third of the annual production of belugacaviar.. pinapple was really THE luxery food queens showed of (but to pricy to reat) king gasped at at anybody else dreamt off. this pizza haway was the decadent dish of that era. proper billionairfood.
two slices of brioche, a slice of fine ham, a slice of fine cheece.. a slice of pinapple.. grilled ... (tosti after all).. than served slice in halve with a confit cherry on top (which alone was worth a fortune likely more than an labourer made in a couple monhts)
-> when the pizza reached canada.. this was JUST as canned pinapple entered the market and drove the price into affordable.. for middleclass.. but earsly enough it still had this luxery repuration.. + a large amount of german migrants. who remembered this legendairy tosti hawai..
and so the pizza hawai was born.. originally with confited cherries... but soon shops left those off as they were the lionshare of the cost of making one.. and found out customers ordered them just as much without them.
3 as stated the original pizza hawai had cherries and pinapple.. just confited ones not fresh ones.
so I see not much an issue there..

if you grind down anshovis in a paste.. that you than add to a tomato sauce instead of salt.. thats fine..
but believe me some ital;ians toss like a whole can of them straight on a pizza.. and if you ever bit in one of those buggers... well I am dutch.. I am used to salted herring.. but these.... well lets say they taste how surstrommen smells ..
