They might. Nintendo would sue a single mom for a crude drawing of Mario in icing on her child's birthday cake.

No.

Unless they also want to sue Nexomon, TemTem, and Coromon years after their release.

With a name like Amiimo they're kind of asking for a trademark infringement lawsuit. That looks and sounds way too much like Amiibo.

Why? It isn't confusing with "Amiibo" and isn't a figure line.

Amiibo is a trademark that's used in connection with both figurines and video games. Nintendo probably registered it for both. Trademark distinctiveness is also a factor in how this sort of thing is determined, and Amiibo is distinct enough that just changing the M to a B is likely to be an intentional riffing of Nintendo's identity. I think Nintendo has a justified case.

What video game is called Amiibo?

That's not even a joke, I worked in a bakery where I had to deny that request for that reason.

What if people thought this was the game called Amiibo and thought it would be some Skylanders type game where you could use the Amiibo you already got? What if Nintendo wanted to name a game Amiibo in the future?

Some games are also marked Amiibo on the box like Twilight Princess H.D.[storage.googleapis.com].
lol
Who doesn't Nintendo slap a lawsuit on. I'll never again drop that company a dime.
It will depend a lot on if devs are Japan based, Palworld devs were sued specifically because Japan allow insane patents.
