I find that I can't enjoy the older ones as much as I used to because I'm too used to the newer storytelling mechanics.
Start at maybe 1990 and just watch everything.
Panic Agent
Cowboy Bebop
Samurai Champloo
Akira
Memories 1995
NeoTokyo
Robot Carnival!
Anyway lol, on the (semi-) hidden gems side of things, I've reminisced about Fate/Zero recently. What masterpiece that was : the characters, the visuals, the soundtrack...I've been meaning to rewatch it with friends, but the plebs have picked Mob Psycho instead for our next watch party. Shame.
Also loved NGE, Code Geass, Gurren Lagann, Berserk, LoGH, Kaiji and Steins;Gate. All of those deserve a 9 or a 10 imo.

Grimgar: Of Fantasy And Ash. It's a great take of the realism of trying to survive in a fantasy world. Nobody is OP and the reality of stuff hits hard.

C The Money of Soul and Possibility Control
Basilisk
Space Dandy
Ergo Proxy
Texhnolyze
Goblin Slayer
Anyway, I'll go with Liz and the Blue Bird.
While the story is very simple just like the character development that came from its prequels, from two seasons of Sound! Euphonium, there's a hidden beauty within that not everyone can appreciate.
If you've ever felt really strongly nostalgic about something and wanting to boast about how good times you've used to have, I guess that'd be a fair comparison.
