Pioneers of Pagonia - Official Guide on GeforceNow
I use GeforceNow (Nvida's cloud base gaming to play windows games on a Mac). The game plays fine, but I have purchased the guide, which installs as a DLC.

The instructions say:

Where do I find the guidebook after purchase?
After the installation, Steam automatically saves the PDF file in the Pioneers of Pagonia folder. Usually, this is:

C:\Program Files (x86)\Steam\steamapps\common\Pioneers of Pagonia\Official Guide

As I've got my steam installed on a MAC, does anyone know how I access this guide?

On GeForce Now, you don’t have direct access to the game’s install folders like on a regular PC or Mac. Since the guide is a PDF DLC, the best workaround is to check your Steam Library > Pioneers of Pagonia > Manage > Browse Local Files but this option may not work on GeForce Now.

If that doesn't work, you can also try checking the Steam > DLC section in the game’s properties to see if there’s a direct way to open the file, or contact the devs sometimes they offer a separate download link for guide PDFs when cloud access is limited.

I'm also struggling how to select the alpha version of the game in GeForce now. I select it in the Beta section but it does not save.

No problem! For the alpha version issue on GeForce Now: after selecting the beta/alpha in the Betas tab, try fully closing and relaunching the game session from your GeForce Now library. Sometimes it doesn’t register until you reconnect. Also, make sure Steam Cloud is enabled so settings sync properly.
