If the game doesn't offer "Cloud Saving" then the saves will probably end up deleted too (depending on if the saves are located where the main game folder is and you delete it)
Uninstalling a game won't remove all of its files/folders so make sure to track where every folder/file ends up (it's never at the same location for every game)
I had a game folder end up in my documents etc. So, make sure you track the game files, save file location and all that jazz, if you plan on fully deleting everything but want to keep the saves.
If I uninstall a game that doesn't offer any Cloud Saves but know I'll play the game later on, I'll keep the save files. It all depends on you and what you want to do with said game/their saves.
