It will display the moving tank's health right? Maybe to not confuse players, use the green skin for one team? (yeah I'm not even sure of what I said because, green is for regen so :\)
Or display red's tank, blu's tank text in the healthbar?

Giant, and the tank, are already balanced so both team can win at any time of the game.
Allowing players to select a special robot on spawn with some boost will definitively unbalance the game.
Also MvM upgrades are blocked in PvP gamemodes, so red can't buy upgrades, you can't still make a menu, but imo this will confuse new players.

If you have a high amount of point it's normal, and those points aren't the ones who tells if you will be the next giant

Sadly, the romevision is blocked on the blu tank, and forced on the red one, because reds are wood themed, and blus high-tech.
And romevision miscs can't be forced on players, because it will replace all their miscs, since it takes a misc slot or add them after the client spawned, because the limit of 3 comestics is a fake limit, and those miscs would be invisible because of valve's rules, this can be fixed, but I'm not sure Linux_lover or Banshee wants to risk that.
But I don't see a problem in having both tanks under romevision, so yeah that would be cool.
So I agree with you, for the tanks only.

We're considering trying this out in the next version (with a cvar to disable it). Everyone I've asked so far seems to approve of the idea.

I agree a list of 3 random giants would be interesting if the server has more than 3 giants in the cfg. I think it's a bit frustating when you play a giant you don't like
